About 80% of the world peanut production comes from rainfed regions of the semiarid tropics, where the yields are generally low and variable due to erratic water deficits and elevated temperature. Peanut is unique because the pods are harvested and require shelling to liberate the seeds for planting. Although peanut was planted in-shell over a hundred years ago, and shown to have adequate germination and emergence ( Sturkie and Buchanan, 1973 ), all seed for commercial production in the U.S. is shelled prior to planting. Peanut is an important crop grown worldwide. Commercially it is used mainly for oil production but apart from oil, the by-products of peanut contains many other functional compounds like proteins, fibers, polyphenols, antioxidants, vitamins and minerals which can be added as a functional ingredient into many processed foods.
